Recipe: Pam's Pumpkin Bars

I had a craving for pumpkin bars driving home last night. It's been YEARS since I made this recipe, so when I say it was out of the blue believe me (and, NO!, I'm not pregnant). It's been so long that after looking through 3 recipe boxes, I couldn't find the recipe. When that happens generally I call my mom, but she's on a cruise this week. ARG! The recipe originally came from the ex-daughter-in-law of my mom's best friend. So I called Marilyn! THIS WAS A SERIOUS CRAVING! I jotted it down on the back of an envelope (sure fire way to lose it again) and made PUMPKIN BARS!

As the bars were baking, I started thinking I needed to do something with the envelope. In recent months I've been converting old family recipes into 6x6 recipe cards. So, as they cooled I sat down and did it!

I always use MS Publisher to format my recipes. I find it allows me more formatting options than MS Word. This font is CK Circle Serif. The pumpkins are colored with Copics, highlighted with orange glitter pen and white Souffle pen. Then punched out with a Mega oval scallop. I used sponges to add the "ground", distress around the edge, and a bit of "sky". The twisting strands is Scrapper's Floss. This is a "new" product I just came across - it comes in a box like dental floss but it is a twisted paper. Wrapping it tightly around my piercer makes it curly - surprisingly it stays curly. A couple of rhinestones for bling (because you always need bling, right?)


Stamps: Inkadinkado ALL HALLOW'S EVE
Paper: SU! Confetti Natural, brown, Bo Bunny
Ink: Memento Tuxedo Black, SU! Old Olive, Certainly Celery, Always Artichoke, Close to Cocoa
Accessories: Copic, scallop oval punch,
sponges, rhinestones, Scrapper's Floss, and Souffle pen.

Here's the recipe for you:

Pam’s Pumpkin Bars

· 1c oil
· 2c sugar
· 4 eggs
· 2c pumpkin
· 2c flour
· 2t baking powder
· 1t salt
· 2t cinnamon
· 1/2t nutmeg

Cream oil, sugar, eggs together. Add pumpkin. Mix dry ingredients together and slowly add to egg mixture. Pour into jelly roll pan. Bake 350 for 30-40 minutes. Cool.

Cream Cheese Frosting
· 3oz cream cheese
· 3/4c butter
· 1t vanilla
· 1T milk
· 3c powdered sugar (approximately)

Whip cream cheese and butter together. Add milk and vanilla. Slowly add powdered sugar until frosting is light and fluffy. Spread over cooled bars.

  2. Gorgeous recipe card, Deb, and the pumpkin bars sound SO yummy! I'm a huge fan of anything containing cream cheese and DH loves pumpkin, so I'm sure this recipe would be a hit in our household!!

  5. Wow, they look YUMMY! Who doesn't love cream cheese and pumpkin?! :D (hit in our household too) might have to make this one soon too. Love what you are doing with your family recipes. Those pumpkins are colored beautiful, and the bling and floss really top it off! Lovely, Deb! :)

  9. Mmmmm, those look delish! You've made up a pretty recipe card for them...now you should be able to find that recipe from now on! ;) I love that floss I use it alot, looks great on the pumpkins and love the bling too.
